Henschel's Meat Processing opened its doors in June of 2013 

under the ownership of Trevor and Erin Henschel.

Our business is a family owned and operated custom meat processing shop
that focuses on the individual needs of our customers.

The Henschel Family Story 


Trevor and Erin both attended the University of Wyoming, Trevor majoring in Animal Science and Erin majoring in History.  They were married in 2003 and started a family in 2005, with the birth of their first daughter. Ten years later, with three more daughters and one son, the family decided to relocate to Eastern Colorado.  Before opening Henschel's Meat Processing, they lived near Simla, Colorado where Trevor managed the meat department at a large grocery store and Erin taught and coached high school students while focusing on raising their family.  When the opportunity to purchase the meat locker in Kirk, Colorado arose, Trevor and Erin decided to take a leap of faith and open their own business.  In the summer of 2013 the family relocated to the surrounding area and started a new chapter in their life story on the rolling plains of Eastern Colorado where they not only had another daughter, but became involved in an awesome community that  welcomed them with open arms. The Henschel Family is proud to be part of this great community and are completely immersed in the culture and life on the Eastern Plains of beautiful Colorado.
